Slow Cooker Pork Carnitas Recipe: Crispy, Juicy Mexican Pork

Image
Slow cooker pork carnitas is the easiest path to the best tacos of your life: a pork shoulder rubbed with cumin and oregano, slow-cooked in orange and lime juice until it falls apart, then crisped in a hot pan until the edges turn golden and crackly. Juicy inside, crispy outside — that contrast is the whole point. The slow cooker does the hard work. Eight hours on low turns a tough shoulder meltingly tender, and the citrus in the cooking liquid keeps the pork bright instead of heavy. The real magic happens at the end: shred the pork, spread it in a screaming-hot skillet with a splash of its own cooking liquid, and let it sit undisturbed until the edges char. Do not skip that step — crisping is what makes carnitas carnitas. Crispy edges, juicy center — carnitas night done right. Lontong Sayur Recipe: Indonesian Rice Cakes in Rich Coconut Curry

Lontong sayur is Indonesia's beloved comfort breakfast: silky compressed rice cakes bathed in a rich, golden coconut curry with chayote, long beans, carrots, tofu, and tempeh, crowned with a halved boiled egg, crispy fried shallots, and sambal for heat. It is the dish vendors ladle from giant pots at dawn.

The secret is the two-stage coconut milk technique: simmer the vegetables in thin coconut milk so they cook gently, then stir the thick cream in last over low heat. That keeps the sauce velvety instead of split, while the bloomed spice paste of shallots, garlic, candlenuts, turmeric, and coriander gives deep, layered flavor.

Ingredients

  • 800 g / 28 oz store-bought lontong or ketupat rice cakes, sliced thick
  • 1 chayote (labu siam), ~400 g / 14 oz, peeled and wedged
  • 150 g / 5 oz long beans, in 4 cm / 1.5-inch pieces
  • 2 carrots, ~200 g / 7 oz, sliced diagonally
  • 200 g / 7 oz firm tofu, cubed and lightly pan-fried
  • 150 g / 5 oz tempeh, cubed
  • 800 ml / 3⅓ cups thin coconut milk
  • 200 ml / ¾ cup thick coconut milk (or coconut cream)
  • Spice paste: 8 shallots (~100 g), 4 garlic cloves, 3 candlenuts (kemiri), 1 tsp ground turmeric, 1 tbsp ground coriander
  • Aromatics: 2 Indonesian bay leaves (daun salam), 2 stalks lemongrass (bruised), 3 cm / 1-inch galangal (bruised)
  • 4 hard-boiled eggs, halved
  • 1½ tsp salt, 1 tbsp palm sugar
  • Fried shallots and sambal, to serve

Dripping with rich coconut curry.

Instructions

  1. Prep: Hard-boil the eggs (10 min, cool, peel, halve). Slice the lontong into 1.5 cm / ½-inch rounds. Cut all vegetables.
  2. Make the paste: Blend the shallots, garlic, candlenuts, turmeric, and coriander with a splash of water until smooth.
  3. Bloom: Heat 2 tbsp oil in a pot over medium heat. Sauté the paste with bay leaves, lemongrass, and galangal for 4–5 minutes until fragrant and the oil separates at the edges.
  4. Simmer hard veg: Pour in the thin coconut milk, stir in the paste, add carrots and chayote; simmer gently 8 minutes.
  5. Add the rest: Stir in tofu, tempeh, and long beans; simmer 5 minutes until the chayote is just tender.
  6. Finish: Lower the heat; stir in the thick coconut milk gradually. Season with salt and palm sugar; warm 2 minutes. Never boil hard — the coconut milk will split.
  7. Serve: Arrange lontong in bowls, ladle sayur lodeh over, top with egg halves, fried shallots, and sambal.

Everything you need for sayur lodeh.

Tips & Variations

  • Ketupat works too — same thing as lontong. Refresh firm cakes by steaming 5 minutes.
  • Rice-cooker shortcut: cook 250 g / 1¼ cups jasmine rice very soft, press into an oiled pan, chill 2 hours, slice.
  • Milk split? Too hot. Add thick milk last on low heat, stir gently. Rescue: whisk in 2 tbsp warm water off the heat.
  • Thicker or thinner: add 100 ml / ⅓ cup water for soupier lodeh; simmer 3 extra minutes before the thick milk for thicker.
  • Spicier: blend 2–3 red chilies into the paste, or add more sambal at the table.
  • Banana-leaf aroma: serve on banana leaves — the hot curry releases a lovely fragrance.
  • Padang style: swap tempeh for young jackfruit (nangka muda).

Nutrition Note

Each bowl is around 480 kcal: fiber from the vegetables, protein from tofu, tempeh, and egg, slow carbs from the rice cakes. Coconut milk is high in saturated fat — use light coconut milk and halve the cream for a lighter version.

FAQ

Can I use ketupat instead of lontong?
Yes — both are compressed rice cakes. Slice thickly and steam 5 minutes if firm.

Why did my coconut milk split?
Too much heat, or thick milk added too early. Add it last on low heat and never hard-boil after.

Can I make it ahead?
Yes — store lontong and sayur separately up to 2 days refrigerated; reheat the curry gently, steam the lontong.

Vegetarian protein swaps?
Double the tofu/tempeh, add mushrooms or chickpeas; skip the egg for a fully vegan bowl.

How do I store leftovers?
Fridge within 2 hours, eat within 2 days. Don't freeze — coconut curry splits when thawed.

This lontong sayur is breakfast worth waking up early for — warm, fragrant, and comforting. Save this recipe and try it this weekend, then leave a comment telling me how it turned out.
