Classic Guacamole Recipe: Fresh, Creamy Mexican Dip

Image
Classic guacamole is proof that the best recipes are often the simplest: ripe Hass avocados mashed with lime juice, finely diced red onion, tomato, cilantro and a pinch of salt. No cooking, no fuss — just ten minutes between you and the creamiest, freshest dip on the table. The secret is in the avocados. Choose Hass avocados that yield gently to pressure and mash them by hand, not in a blender — a fork leaves little chunks that give guacamole its texture. Lime juice does double duty: it brightens the flavour and keeps the green colour vivid while you serve. Make it just before eating, and it will disappear faster than any dip you have ever put out. Carrot Ginger Soup Recipe: Warming, Spiced and Silky

Carrot ginger soup is the bowl you reach for when you want something warming, bright and quietly nourishing: sweet carrots simmered until tender, blended with fresh ginger, garlic and onion into a silky, golden soup, then finished with a swirl of cream and fresh cilantro. It is naturally gluten-free, kind to the budget, and on the table in about 40 minutes.

The secret is cooking the carrots properly soft and blending while hot. Ginger brings a gentle heat that lifts the carrots' sweetness without overpowering it, and a good blender — or an immersion blender straight in the pot — gives the soup its velvety body without a drop of flour.

Flat lay of carrot ginger soup ingredients: fresh carrots, ginger root, onion, garlic, vegetable stock, olive oil, cream and cilantro

Velvety smooth and bright with ginger — simmer, blend and serve.

Instructions

  1. Soften the aromatics: Heat the olive oil in a large pot over medium heat. Add the onion and a pinch of salt and cook for 5 minutes until soft and translucent, then stir in the garlic, ginger and cumin and cook for 1 minute more until fragrant.
  2. Add the carrots and stock: Tip in the sliced carrots and pour over the vegetable stock. Bring to a boil, then reduce to a gentle simmer.
  3. Simmer until tender: Cover partially and simmer for 20–25 minutes, until the carrots are completely soft and a knife slides through them with no resistance.
  4. Blend until silky: Blend the soup until completely smooth, working in batches if your blender is small and never filling it more than half full with hot soup. An immersion blender in the pot works just as well.
  5. Finish with cream and lemon: Return the soup to the pot, stir in the cream and lemon juice, and warm through over low heat without boiling. Taste and adjust the salt, pepper and lemon.
  6. Adjust the texture: If the soup is thicker than you like, loosen it with a splash of stock until it coats a spoon; if it is too thin, simmer uncovered for a few minutes to reduce.
  7. Serve: Ladle into warm bowls, swirl with extra cream, scatter with cilantro leaves and serve with crusty bread for dipping.

Tips & Variations

  • Cook the carrots fully soft. Undercooked carrots blend grainy, so simmer until they collapse easily — this is the single biggest factor in a silky soup.
  • Grate the ginger finely. A microplane grater releases the most flavour and avoids fibrous strands in the finished soup.
  • Blend hot, safely. Hot soup expands in a blender, so fill it halfway, hold the lid down with a towel, and start on low speed.
  • Make it vegan. Swap the cream for coconut cream or cashew cream — both keep the soup rich and silky, and coconut adds a lovely warmth.
  • Add a little heat. A pinch of chili flakes or half a deseeded red chili simmered with the carrots gives a gentle warmth that suits the ginger.
  • Roast for deeper flavour. Roasting the carrots at 200°C / 400°F for 25 minutes before simmering adds caramelized sweetness — a great weekend variation.
  • Freeze it well. Freeze without the cream for up to 3 months, then stir the cream in after reheating for a perfectly smooth texture.

Nutrition Note

Per serving, this carrot ginger soup provides roughly 240 kcal, 4 g protein, 28 g carbohydrates and 13 g fat. Carrots are rich in beta-carotene and vitamin A, while fresh ginger adds anti-inflammatory compounds and a bright, warming note with almost no calories. The cream adds satisfying richness, but swapping it for coconut cream or skipping the swirl keeps the soup lighter, and serving it with whole-grain bread adds fibre that rounds out the meal.

FAQ

Can I use baby carrots?

Yes — baby carrots work well and need no peeling. Use the same weight, about 900 g, and simmer until completely soft before blending.

How spicy is the ginger?

Gently warming rather than hot. If you prefer a milder soup, reduce the ginger to 1 tablespoon; for more bite, increase it to 3 tablespoons.

Do I need to peel the carrots?

Peeling gives the smoothest colour and flavour, but well-scrubbed unpeeled carrots also work — the soup will just be slightly more rustic in colour.

How long does it keep?

Up to 4 days in the fridge in a sealed container, or up to 3 months frozen without the cream. Reheat gently and stir the cream in at the end.

Is this soup gluten-free?

Yes — the soup itself is naturally gluten-free. Just serve it with gluten-free bread if you need the whole meal to be gluten-free.

Make this carrot ginger soup the next time you want something golden, silky and quietly restorative with very little effort — sweet carrots, fresh ginger and a good blender do most of the work. If you try it, tell us in the comments whether you kept it classic or gave it a chili kick.
