Chicken parmesan is the Italian-American classic that never lets a family dinner down: thin chicken cutlets in a golden, garlicky breadcrumb crust, spooned with rich marinara, blanketed in melted mozzarella and baked until bubbling. It tastes like a restaurant favourite, but it is firmly weeknight territory — on the table in about 45 minutes.
The secret is pounding the chicken evenly and baking the breaded cutlets briefly before the sauce goes on. That way the crust stays crisp under the cheese instead of turning soggy, and the mozzarella melts into the sauce rather than sliding off.
Golden, crisp and saucy — the baked Italian classic the whole table loves.

Chicken, crumbs and cheese — pantry staples, restaurant result.
Ingredients
- 4 boneless, skinless chicken breasts (about 700 g / 1.5 lb total)
- 1 tsp fine sea salt, divided
- 1/2 tsp black pepper, freshly ground
- 60 g / 1/2 cup plain flour
- 2 large eggs, beaten
- 100 g / 1 cup panko breadcrumbs
- 50 g / 1/2 cup finely grated parmesan, divided
- 1 tsp garlic powder
- 1 tsp dried oregano
- 3 tbsp / 45 ml olive oil
- 480 ml / 2 cups marinara sauce
- 200 g / 7 oz fresh mozzarella, torn or sliced
- Fresh basil leaves, to serve
- Spaghetti or crusty bread, to serve
Instructions
- Prepare the chicken: Preheat the oven to 200°C / 400°F. Place each chicken breast between two sheets of baking paper and pound to an even 1 cm / 1/2 inch thickness. Season both sides with half the salt and the pepper.
- Set up the breading station: Put the flour in one shallow bowl, the beaten eggs in a second, and the panko mixed with half the parmesan, the garlic powder, oregano and remaining salt in a third.
- Bread the cutlets: Dredge each breast in flour, shaking off the excess, dip in egg, then press firmly into the panko mixture so the coating sticks all over. Set aside on a plate.
- Crisp the cutlets: Heat the olive oil in a large oven-safe skillet over medium-high heat. Cook the cutlets for 3–4 minutes per side until deep golden — they do not need to be cooked through yet.
- Sauce and cheese: Spoon the marinara sauce over and around the cutlets (not too much on top, or the crust softens), then top each one with torn mozzarella and the remaining parmesan.
- Bake until bubbling: Transfer the skillet to the oven and bake for 12–15 minutes, until the cheese is melted and bubbling and the chicken reaches 74°C / 165°F inside. Switch to the grill/broiler for the last 2 minutes if you want extra browning.
- Rest and serve: Rest for 5 minutes, scatter with fresh basil, and serve over spaghetti or with crusty bread and a green salad.
Crisp outside, juicy inside, cheese pull guaranteed.
Tips & Variations
- Pound evenly or pay for it. Uneven chicken cooks unevenly — the thin end dries out while the thick end is still pink, so take a minute to flatten each breast properly.
- Keep the sauce off the crust. Spooning sauce around the cutlets rather than drowning them is what keeps the coating crisp under the cheese.
- Use panko, not fine crumbs. Panko gives a craggier, crunchier crust that holds up to sauce far better than fine dried breadcrumbs.
- Use low-moisture mozzarella if you have it. Fresh mozzarella is lovely but releases water; low-moisture mozzarella melts just as well and keeps the dish from getting wet.
- Make it a sandwich. Leftovers are superb tucked into a toasted roll with extra marinara and basil — the classic chicken parm sub.
- Add a little heat. A pinch of chili flakes in the breadcrumb mixture or a spoonful of spicy marinara gives a gentle warmth kids still tolerate.
- Make it gluten-free. Swap in gluten-free flour and gluten-free panko — the method and timings stay exactly the same.
Nutrition Note
Per serving, this chicken parmesan provides roughly 520 kcal, 46 g protein, 26 g carbohydrates and 24 g fat. Chicken breast keeps the dish high in lean protein, while the cheese and breadcrumb coating add the richness that makes it comfort food — pairing it with a big green salad or steamed vegetables balances the plate nicely. Serving it over a smaller portion of spaghetti, or with salad instead of pasta, brings the total down without losing the point of the dish.

FAQ
Can I bake the chicken without frying it first?
Yes — place the breaded cutlets on a wire rack over a lined tray, spray generously with oil and bake at 220°C / 425°F for 18–20 minutes, then add sauce and cheese and bake 10 minutes more. The crust will be slightly less crisp but still good.
Why did my coating fall off?
Usually the chicken was wet or the coating was not pressed on firmly. Pat the breasts dry, shake off excess flour, and press the panko on with your palm before frying.
Can I make chicken parmesan ahead?
Bread the cutlets up to a day ahead and refrigerate uncovered so the coating dries slightly, then fry and bake as directed. Fully cooked leftovers keep 3 days in the fridge and re-crisp well in a hot oven.
Can I use chicken thighs?
Yes — boneless, skinless thighs work beautifully and stay even juicier; pound them to an even thickness and add 2–3 minutes to the baking time.
What should I serve with it?
Spaghetti with extra marinara is the classic, but a simple green salad, garlic bread or roasted vegetables all work — and a glass of Chianti does not hurt.
Make this crispy chicken parmesan the next time family dinner needs a guaranteed win — golden cutlets, rich marinara and bubbling mozzarella do the work in 45 minutes. If you try it, tell us in the comments whether you served it over pasta or in a sandwich.
