Slow Cooker Pork Carnitas Recipe: Crispy, Juicy Mexican Pork

Image
Slow cooker pork carnitas is the easiest path to the best tacos of your life: a pork shoulder rubbed with cumin and oregano, slow-cooked in orange and lime juice until it falls apart, then crisped in a hot pan until the edges turn golden and crackly. Juicy inside, crispy outside — that contrast is the whole point. The slow cooker does the hard work. Eight hours on low turns a tough shoulder meltingly tender, and the citrus in the cooking liquid keeps the pork bright instead of heavy. The real magic happens at the end: shred the pork, spread it in a screaming-hot skillet with a splash of its own cooking liquid, and let it sit undisturbed until the edges char. Do not skip that step — crisping is what makes carnitas carnitas. Crispy edges, juicy center — carnitas night done right. Chicken Quesadilla Recipe: Cheesy, Crispy Mexican Classic

Chicken quesadillas are the ultimate fast dinner: a golden, crispy tortilla folded around juicy spiced chicken, sweet peppers and a river of melted cheese. They take 20 minutes from fridge to table, use up leftover chicken beautifully, and please absolutely everyone — which is why they belong in every weeknight rotation.

The trick is balance: enough cheese to glue everything together, chicken seasoned boldly with cumin and smoked paprika, and a dry pan hot enough to crisp the tortilla without burning it. Serve with salsa, sour cream and lime, and dinner is done before anyone can ask "what's for dinner?" twice.

Flat lay of chicken quesadilla ingredients: tortillas, cooked chicken, shredded cheese, bell pepper, onion, spices, lime and cilantro

Tortillas, chicken and cheese — dinner in 20 minutes starts here.

Ingredients

  • 4 large flour tortillas (about 25 cm / 10 inches)
  • 400 g / 14 oz cooked chicken breast, shredded or sliced
  • 200 g / 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp fine salt
  • 1/4 tsp black pepper
  • 1 tbsp / 15 ml vegetable oil, for the pan
  • 1 tbsp chopped fresh cilantro (optional)
  • 1 lime, cut into wedges, to serve
  • Salsa and sour cream, to serve

Instructions

  1. Season the chicken: Toss the shredded chicken with the cumin, smoked paprika, garlic powder, salt and pepper until evenly coated. If the chicken is cold from the fridge, warm it briefly in a pan first.
  2. Soften the vegetables: Heat half the oil in a large frying pan over medium-high heat. Cook the pepper and onion for 3–4 minutes until just softened, then tip them onto a plate.
  3. Build the quesadilla: Lay a tortilla flat. Scatter a quarter of the cheese over one half, top with a quarter of the chicken and vegetables, then a little more cheese. Fold the empty half over to close.
  4. Crisp the first side: Wipe the pan, add a little oil, and cook the quesadilla over medium heat for 2–3 minutes until the underside is golden and crisp.
  5. Flip carefully: Press gently with a spatula, flip, and cook 2–3 minutes more until the second side is golden and the cheese is fully melted.
  6. Repeat: Repeat with the remaining tortillas, chicken, vegetables and cheese, adding a touch more oil to the pan as needed.
  7. Rest and cut: Rest each quesadilla for 1 minute, then cut into 3 wedges. Serve immediately with lime wedges, salsa and sour cream.

That cheese pull is the whole point — serve immediately.

Tips & Variations

  • Cheese on both sides of the filling. Cheese against each tortilla half acts as glue — it keeps the quesadilla sealed and stops the filling falling out.
  • Medium heat, not high. A screaming-hot pan burns the tortilla before the cheese melts. Medium heat gives you a golden crust and a fully molten center.
  • Don't overfill. A modest filling crisps better and stays inside; an overloaded quesadilla leaks cheese all over the pan.
  • Use leftover chicken. Rotisserie chicken, yesterday's roast or grilled thighs all work — just season generously so the filling isn't bland.
  • Add heat if you like it. Sliced jalapeño, a pinch of chilli flakes or a spoonful of chipotle in adobo turns a family dinner into a grown-up one.
  • Make it veggie. Swap the chicken for black beans and sweetcorn, or mushrooms and spinach, and keep everything else the same.
  • Keep them crisp. Hold finished quesadillas on a wire rack in a low oven (120 °C / 250 °F) — a plate traps steam and softens the crust.

Nutrition Note

Per serving, these quesadillas provide roughly 520 kcal, 34 g protein, 38 g carbohydrates and 24 g fat. Chicken supplies lean protein, peppers add fibre and vitamin C, and cheese brings calcium along with the fat. To lighten the plate, use whole-wheat tortillas, reduced-fat cheese and load up the salsa and salad on the side — the crunch and the cheese pull stay exactly the same.

FAQ

What is the best cheese for quesadillas?

A good melting cheese: Monterey Jack, cheddar, or a mix of both. Pre-shredded cheese works, but freshly grated melts more smoothly.

Can I use corn tortillas instead of flour?

Yes — warm them first so they don't crack, and use two small corn tortillas sandwiched together instead of one folded large one.

How do I stop my quesadilla falling apart?

Cheese on both sides of the filling, a modest amount of filling, and a full melt before you flip. Let it rest a minute before cutting, too.

Can I make quesadillas ahead of time?

Assemble them up to a day ahead, cover and refrigerate, then cook fresh. Cooked quesadillas reheat in a dry pan, but they are never as crisp as fresh.

What should I serve with chicken quesadillas?

Salsa, sour cream and lime are the classics. Add guacamole, pickled red onion or a simple shredded cabbage slaw for a fuller plate.

Golden, cheesy and on the table in 20 minutes — chicken quesadillas are the dinner you make when everyone is hungry and nobody can agree. If you try them, tell us in the comments what went into yours.
