Slow Cooker Pork Carnitas Recipe: Crispy, Juicy Mexican Pork

Image
Slow cooker pork carnitas is the easiest path to the best tacos of your life: a pork shoulder rubbed with cumin and oregano, slow-cooked in orange and lime juice until it falls apart, then crisped in a hot pan until the edges turn golden and crackly. Juicy inside, crispy outside — that contrast is the whole point. The slow cooker does the hard work. Eight hours on low turns a tough shoulder meltingly tender, and the citrus in the cooking liquid keeps the pork bright instead of heavy. The real magic happens at the end: shred the pork, spread it in a screaming-hot skillet with a splash of its own cooking liquid, and let it sit undisturbed until the edges char. Do not skip that step — crisping is what makes carnitas carnitas. Crispy edges, juicy center — carnitas night done right. Creamy Garlic Shrimp Pasta Recipe: Quick 25-Minute Dinner

Creamy garlic shrimp pasta is the dinner you make when you want something that tastes like a restaurant meal but need it on the table in 25 minutes. Juicy shrimp, plenty of garlic, a silky parmesan cream sauce and fettuccine that drinks it all up — it is fast, forgiving and universally popular.

The trick is timing: the sauce comes together in the same pan the shrimp sear in, so all those golden, garlicky pan juices become part of the sauce, and a splash of starchy pasta water at the end turns it glossy and clingy instead of heavy.

Flat lay of creamy garlic shrimp pasta ingredients: raw peeled shrimp, fettuccine, garlic cloves, butter, heavy cream, parmesan cheese, parsley and lemon

Shrimp, garlic, cream and parmesan — that is the whole shopping list.

Ingredients

  • 340 g / 12 oz fettuccine (or linguine)
  • 450 g / 1 lb large shrimp, peeled and deveined, tails on or off
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 5 garlic cloves, thinly sliced
  • 1/2 tsp chilli flakes (optional)
  • 240 ml / 1 cup double (heavy) cream
  • 60 g / 2/3 cup freshly grated parmesan, plus extra to serve
  • 1 tsp fine sea salt, plus more for the pasta water
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice, freshly squeezed
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the pasta: Bring a large pot of well-salted water to a boil and cook the fettuccine until just shy of al dente, about 1 minute less than the packet says. Before draining, reserve 240 ml / 1 cup of the starchy pasta water.
  2. Sear the shrimp: While the pasta cooks, heat the olive oil and 1 tablespoon of the butter in a large deep skillet over medium-high heat. Season the shrimp with salt and pepper, sear for 1–2 minutes per side until pink and just opaque, then remove to a plate.
  3. Soften the garlic: Lower the heat to medium, add the remaining butter, the garlic and the chilli flakes, and cook for 1 minute until fragrant — do not let the garlic brown.
  4. Build the sauce: Pour in the cream, scraping up the golden bits from the pan, and simmer gently for 2–3 minutes until slightly thickened.
  5. Add the parmesan: Stir in the parmesan a handful at a time until melted and smooth, then add the lemon juice and season with salt and pepper.
  6. Combine: Add the drained pasta to the skillet with a splash of the reserved pasta water and toss for 1–2 minutes until every strand is glossy and coated, adding more pasta water as needed.
  7. Finish and serve: Return the shrimp to the pan, toss briefly to warm through, then serve immediately topped with parsley and extra parmesan.

Tips & Variations

  • Do not overcook the shrimp. They finish cooking in the residual heat — pull them the moment they turn pink and curl into a loose C shape; a tight O means overdone.
  • Keep the garlic pale. Browned garlic turns bitter and will flavour the whole sauce, so keep the heat at medium and stir constantly.
  • Save the pasta water. Its starch is what makes the sauce cling to the pasta instead of pooling at the bottom of the bowl.
  • Grate your own parmesan. Pre-grated cheese contains anti-caking agents that make sauces grainy; a fresh wedge melts far more smoothly.
  • Add vegetables. A handful of baby spinach wilted into the sauce, or sun-dried tomatoes stirred in with the cream, both work beautifully.
  • Make it lighter. Swap half the cream for whole milk and reduce the butter slightly — the sauce will be a little thinner but still silky.
  • Serve immediately. Cream sauces thicken as they cool, so have bowls warm and diners ready before the pasta hits the pan.

Nutrition Note

Per serving, this pasta provides roughly 620 kcal, 32 g protein, 62 g carbohydrates and 26 g fat. Shrimp are the lean-protein highlight — low in fat, rich in selenium, iodine and vitamin B12 — while the cream and parmesan supply the richness and calcium. The garlic and parsley add more than flavour: garlic brings antioxidants, and parsley adds vitamin K and freshness. Pairing a moderate portion with a green salad keeps the meal balanced without losing any of its indulgent character.

FAQ

Can I use frozen shrimp?

Yes — thaw them fully first, pat very dry with paper towels, and they will sear just like fresh. Wet shrimp steam instead of searing and never develop that golden colour.

What pasta shape works best?

Long strands like fettuccine, linguine or spaghetti hold the cream sauce beautifully, but penne or rigatoni also work — the sauce pools nicely inside the tubes.

Can I make this ahead?

Cream pasta is best served fresh, but you can prep everything in advance: peel the shrimp, grate the parmesan and slice the garlic, then cook the whole dish in 15 minutes.

How do I reheat leftovers?

Reheat gently in a skillet over low heat with a splash of milk or cream to loosen the sauce — microwaving tends to make the sauce separate and the shrimp rubbery.

Can I make it dairy-free?

Swap the cream for full-fat coconut milk and the parmesan for a dairy-free hard cheese alternative; the sauce will be slightly sweeter but still rich and garlicky.

Make this creamy garlic shrimp pasta the next time dinner needs to be fast and impressive — one pan, 25 minutes and a bowl that tastes like a treat. If you try it, tell us in the comments whether you kept it classic or added spinach, sun-dried tomatoes or extra chilli.
